Here I go again, bombarding you with yet another butternut squash recipe. I hope you’ll forgive me! This recipe from the Smitten Kitchen pairs the humble winter squash with hearty farro.
For those of you not familiar with farro, it’s a grain often used as a substitute for pasta or rice. It has a nutty flavor and is rich in fiber, magnesium and vitamins A, B, C, and E. If you’ve never tried it, this is your chance!
When you toss it with some butternut squash, it makes a perfectly simple and satisfying meal. I absolutely loved this dish and I hope you will too!
