Baked Apple Cider Donuts
recipe adapted from Eat, Live, Run
2 cups King Arthur white-whole wheat flour
3/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/2 cup apple cider
1/4 cup buttermilk
2 tbsp soft unsalted butter
1 tsp cinnamon
Directions Preheat oven to 325 degrees and spray two donut pans with nonstick baking spray. In a large bowl, whisk together the dry ingredients (flour through cinnamon). In a medium bowl, combine the wet ingredients (eggs through butter).
Pour wet ingredients into dry ingredients and stir until batter is just blended. It will be a little thick. Portion batter into donut pan, filling each mold 3/4ths of the way full and using wet fingers to spread the batter evenly.
Bake donuts for 25 minutes, until golden. Remove from oven and invert onto rack. Drizzle with cream cheese glaze. Alternately, you can dunk the donuts into melted butter and then dip them in cinnamon sugar.
