Happy Fall! We’ve been blessed with some glorious weather here in Virginia. Personally, I think there is no better way to kick off the month of October than with a pumpkin treat. I ran across this recipe for Honey Whole Wheat Pumpkin Bread a couple of weeks ago at Cookie & Kate. I immediately knew I had to make it, especially since it has 100% whole wheat flour and is sweetened only with honey. Instead of baking a loaf of bread, I went for muffins and added a yummy streusel topping. My kids loved these. They are moist, tender, and packed full of delicious pumpkin flavor.
