Did any of you watch The American Baking Competition that aired on CBS in the spring? It has to be one of my absolute favorite shows of all time. One of the competitors, James, baked this apple pie that was HUGE. Remember James? The likable, funny guy with a beard? If not, here’s a little video to refresh your memory (ok, so maybe I watched the video again too – I needed a good laugh).
Anyways, I don’t know how in the world James managed to slice up so many apples for his pie. I peeled and sliced apples until I thought my hand was going to fall off and my pie still wasn’t as big as his! I might have failed on the “mile-high” part of this recipe, but everything else was a huge success. The crust is amazing (I could just eat the crust alone and be happy) and the filling is bursting with flavor.
If you have plans to visit an apple orchard this fall, I suggest you make this pie. Go ahead and put some ice cream on top!
Mile High Apple Pie
(James’ Recipe from the American Baking Competition on CBS)
10 large apples (Granny Smith, Rome, Fuji)
4 tablespoons unsalted butter
½ teaspoon almond extract
½ cup sugar
2 teaspoons cinnamon
juice from 1 lemon
2 tablespoons all-purpose flour
2 ½ cups all-purpose flour
¾ cup cold unsalted butter
¼ cup chilled shortening
1 teaspoon salt
1 ½ teaspoons sugar
½ cup cold water
¼ teaspoon nutmeg
Mix flour, salt, sugar, and nutmeg with a dough mixer or food processor. Mix in butter and shortening mixture, slowing adding cold water until mixture is all combined. Split into two pieces, wrap it in plastic wrap, and chill for half an hour.
Peel and core apples, slicing the apples very thin. Mix slices with flour, sugar, cinnamon, almond extract, and lemon juice.
Roll dough out to 1/8th inch thick. Press into pie pan. Stack the apples, one by one, into the pie shell, stacking as high as you can. Pour remaining filling over apples. Roll out second crust to 1/8th of an inch and lay over apples. Fold bottom crust under and crimp – trimming extra crust where necessary.
Cut 2-inch vents 1/4-inch deep on top of crust with a sharp knife. Whisk eggs and cold water. Brush mixture over the top crust and dust with sugar.
Bake at 375 degrees for 60 minutes. Cover the top with foil if it browns too quickly.
