I recently re-discovered one of my favorite cookbooks: The Cooking Light 5 Ingredient 15 Minute Cookbook. Why has it been collecting dust on my shelves? I really have no idea, but I’m glad I resurrected it with this recipe! Hearty and satisfying, this rustic Italian dish is perfect for wintertime.
Tuscan Chicken and White Beans 1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
1 teaspoon dried rosemary, crushed, or 2 teaspoons chopped fresh rosemary
¼ teaspoon salt
¼ teaspoon freshly ground pepper
1 cup fat-free, reduced-sodium chicken broth
1 16oz can cannellini beans, rinsed and drained
2 tablespoons sun-dried tomato sprinkles, or a handful of sun-dried tomatoes, diced
Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add chicken, sprinkle with rosemary, salt, and pepper. Stir-fry 2 minutes.
Add broth, beans, and tomato sprinkles to skillet; bring to boil. Reduce heat, and simmer, uncovered, 8 minutes or until chicken is done. Sprinkle with fresh rosemary.
Hmmm. So, I think this recipe actually has more than 5 ingredients, but it is quick and easy nonetheless! I even added one more ingredient – garlic! Because I LOVE garlic. OK, so love may be an understatement.The sun-dried tomatoes add a delightful burst of flavor in this dish. I thought my son was going to devour the whole bag while I was chopping them up!The end result is both savory and hearty. I served up some tasty homemade breadsticks on the side.
