Time for another holiday recipe! I saw this one in a Christmas cookbook last weekend at a family gathering. One of the things I love about my phone? Being able to take pictures of recipes! Unfortunately I cannot remember the name of the cookbook…I should have taken a picture of the cover too, I guess. Oh well!
Gingerbread Muffins 1 stick butter, softened
1/2 cup sugar
2/3 cup mild molasses
1/4 cup milk
2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/2 tsp salt
Preheat oven to 375 degrees. Cream butter and sugar together in large bowl. Beat in eggs, 1 at a time, beating well after each addition. Add molasses and milk. Beat until mixed.
Combine remaining 7 ingredients in medium bowl. Add to butter mixture. Stir until just moistened.
Fill greased muffin cups 3/4 full.
Bake for about 20 minutes or until toothpick inserted comes out clean.
Let stand in pan for 5 minutes before turning out onto wire rack to cool. Makes 12 muffins.
These muffins were so simple and easy to make. It hardly took any time to mix up the batter and pop them in the oven. I was very pleased with the result! They were moist and tender with a wonderful gingerbread taste. I will most definitely be making them again!
